This Prawn and Mango Jasberry Organic Superfood Rice Salad combines all the flavors in the simplest way. Try it, and you’ll be transported back to that beach meal from your last summer break. Ingredients

1 cup of cooked Jasberry Organic Superfood Rice
150g Prawns, peeled and cooked
1/2 cup Cucumber, cubed
1/2 cup Ripe mango, cubed
2 Avocado, cubed
2 tsp White sesame seeds
1/2 tsp Chili flakes

For the dressing
1 tbsp Soy sauce
1/2 Lemon, zest and juice
1 tbsp Extra Virgin Olive Oil
1/2 tbsp Grated fresh ginger

Instructions

1. Cook Jasberry Organic Superfood Rice according to the instructions on the packaging.

2. Combine the dressing ingredients in a mixing bowl.

3. In a large bowl, mix the cooked Jasberry Organic Superfood Rice with the prawns, cucumber, mango, and avocado. Pour the dressing over the mixture, toss to combine, and season to taste.

4. Top with sesame seeds and chili flakes before serving.
