Our Lemon Rice Pudding recipe is simple and can be made in just 10 minutes with a few ingredients you probably already have in your kitchen. Feel free to adjust the sugar to your taste or add extra lemon juice to suit your preference.

Ingredients

1 Pack Jasberry Organic Ready-to-Eat Superfood Rice Coconut
Zest from one lemon, divided
1/2 cup Coconut milk
4 tbsp Organic coconut sugar
Juice of 1 lemon
1/4 tsp Salt
2 tbsp Raisin
1 tsp Cinnamon

Instructions

1. In a saucepan, combine Jasberry Organic Ready-to-Eat Superfood Rice Coconut with raisins, coconut milk, lemon zest, lemon juice, cinnamon, organic coconut sugar, and salt. Cook over low heat, stirring occasionally, until thickened.

2. Turn off the heat. Serve topped with additional lemon zest.
