Ingredients

1 Pack Jasberry Organic Ready-to-Eat Superfood Rice Coconut
1 blocks Extra-firm tofu
2 tbsp Soy sauce
1 tbsp Extra virgin olive oil
1/4 cup Peanut butter
3 tbsp Coconut milk
2 tbsp Organic coconut sugar
2 tsp Fresh grated ginger
2 Garlic cloves, minced
1 tbsp Fresh lime juice
2 tbsp Peanut for garnish
1 tbsp Cilantro, chopped for garnish
2 tbsp Almond sliced for garnish

Instructions

1. Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper. Cut the tofu into cubes, dry with paper towels, and arrange the tofu pieces evenly on the tray. Lightly spray the tops with extra virgin olive oil and bake for 20-25 minutes, or until golden brown.

2. Meanwhile, in a large pan, combine peanut butter, coconut milk, soy sauce, organic coconut sugar, ginger, garlic, and lime juice. Heat over medium, stirring constantly until smooth and creamy, about 5-10 minutes.

3. Heat 1 pack of Jasberry Organic Ready-to-Eat Superfood Rice Coconut based on instruction.

4. When the tofu is done, carefully add it to the pan with the sauce and stir to coat. Serve immediately over the Jasberry Organic Ready-to-Eat Superfood Rice Coconut, and top with sliced almonds and cilantro if desired.
