Superfood Wraps: Kale Pesto Wraps with Jasberry Organic Ready-to-Eat Superfood Rice Coconut

We call this the Superfood Wraps Recipe because it’s packed with your favorite superfoods: Jasberry Organic Ready-to-Eat  Superfood Rice Coconut, avocado, and kale. These wraps are high in fiber and vitamins, thanks to the green collard leaves, kale pesto, and coconut flakes. It’s an excellent meal or light snack to keep you energized all day long!

Ingredients

Kale Pesto
1 Pack Jasberry Organic Ready-to-Eat Superfood Rice Coconut
1 cup Kale shredded, divided (half for pesto, half for wraps)
1 clove Garlic roughly chopped
1/4 cup Parsley roughly chopped
1/2 tbsp Lemon, juiced
1/4 cup Almonds
1/3 cup Extra virgin olive oil
1/2 cup Chickpea, rinsed and drained
Salt and pepper to taste

Wraps
4 Collard Greens leaves, stems removed
1 Cucumber, long thin strips
1 Green bell pepper, long thin strips
1 tbsp Extra virgin olive oil
1 Avocado thinly sliced

Instructions

1. To make the pesto, add half of the kale, salt, pepper, garlic, parsley, lemon juice, almonds, and chickpeas to a blender. Drizzle in extra virgin olive oil and blend until well combined.

2. For the wraps, take the first leaf and lay it flat, upside down. Spread about a tablespoon of pesto on the leaf and smooth it out with the back of a spoon.

3. In a small bowl, toss the remaining kale with extra virgin olive oil and a pinch of salt and pepper. Massage the kale lightly with your hands until it becomes tender and naturally wilted.

4. Arrange the cucumber, cabbage, bell pepper, massaged kale, avocado slices, and Jasberry Organic Ready-to-Eat Superfood Rice Coconut on the leaf. Repeat with the remaining leaves.

5. Gently but tightly roll each wrap, continuing to roll until fully enclosed, with the seam facing down.

6. Slice each wrap in half diagonally. Secure with wooden picks and serve.
