Ingredients

1 Pack Jasberry Organic Ready-to-Eat Superfood Rice Coconut
1 Block extra firm tofu
1 tbsp Organic coconut sugar
1/2 tbsp Chili powder
1/4 tsp Garlic powder
1 tbsp Extra virgin olive oil
2 tbsp Cornstarch 
1 cup Fresh pineapple, diced
1/2 cup Baby spinach, sliced
2 tbsp Green onions, chopped for garnish
1 Avocado, sliced
1/2 cup Cherry tomato
A pinch of pepper

Instructions

1. Heat one pack of Jasberry Organic Ready-to-Eat Superfood Rice Coconut based on instruction.

2. Cut the tofu into cubes, pat dry with paper towels, and place the cubes in a mixing bowl. Add organic coconut sugar, chili powder, garlic powder, and cornstarch, then mix well.

3. Heat extra virgin olive oil in a large pan over medium-high heat. Pan-fry the tofu on all sides until crispy, about 4-5 minutes, stirring consistently. Once cooked, set aside. Add the baby spinach to the same pan, season with salt and pepper, and sauté for 1 minute before removing from heat.

4. Divide the Jasberry Organic Ready-to-Eat Superfood Rice Coconut into bowls, then add the tofu and baby spinach. Top with pineapple, avocado, and cherry tomatoes, and season with pepper. Enjoy!
