Ingredients

1 Pack Jasberry Organic Ready-to-Eat Superfood Rice Original
2 tbsp Extra virgin olive oil
1 tsp Vinegar
1 tbsp Mustard
1 tbsp Shallot, chopped
1 tsp Organic Coconut Flower Nectar
1 Block extra firm tofu, cubed
200g Asparagus, ends trimmed
Pepper to taste

Instructions

1. Heat the Jasberry Organic Ready-to-Eat Superfood Rice Original based on instruction.

2. In a medium skillet, heat extra virgin olive oil over medium-high heat. Add the cubed tofu and cook for 2–4 minutes, or until golden and crispy. Set aside.

3. In the same skillet, add more extra virgin olive oil and sauté the asparagus over high heat for 3–5 minutes, or until lightly browned.

4. In a large mixing bowl, whisk together extra virgin olive oil, red wine vinegar, mustard, shallot, and organic coconut flower nectar. Toss the Jasberry Organic Ready-to-Eat Superfood Rice Original in the dressing. Add the cooked asparagus and mix well.

5. Arrange the rice and asparagus on a large serving plate. Top with crispy tofu, and if desired, add a grind of pepper and a drizzle of extra virgin olive oil.
