Ingredients

1 Pack Jasberry Organic Ready-to-Eat Superfood Original
1 cup Kimchi coarsely chopped
1 tbsp Kimchi juices reserved
1 tbsp Soy sauce
1/2 tbsp Gochujang (Korean red pepper paste)
1/2 tbsp Sesame oil
1 tbsp Extra-virgin olive oil
1 cloves Garlic, minced
1 Onion, diced
1 tsp Freshly grated ginger
5 Mushrooms, sliced
1/2 cup Carrots, sliced
1/2 Kale, leaves chopped
1/4 cup Nori strips
1 Green onions, thinly sliced
1/2 Fresh Red chili finely sliced for garnish

Instructions

1. In a small bowl, whisk together kimchi juice, soy sauce, gochujang, and sesame oil.

2. Heat extra-virgin olive oil in a large skillet over medium-high heat. Add the garlic, onion, and ginger, and cook, stirring frequently, until the onions become translucent, about 1-2 minutes.

3. Stir in the kimchi, mushrooms, and carrots. Cook, stirring constantly, for 2-3 minutes, or until the mushrooms are tender.

4. Add Jasberry Organic Ready-to-Eat Superfood Rice Original, kale, and the kimchi juice mixture. Cook until the kale has wilted, about 2-3 minutes.

5. Serve immediately, topped with nori strips and green onions.
