Spring Quinoa and Jasberry Organic Ready-to-Eat Superfood Rice Salad

Ingredients

For the salad
1 Pack Jasberry Organic Ready-to-Eat Superfood Rice Original
1/4 cup dry quinoa
2 tbsp Green peas
1/2 cup radish, thinly sliced
1/2 cup Carrots, thinly sliced
Cilantro, finely chopped for garnish
For the dressing
1/2 cup Toasted cashew nuts
1/2 tbsp Shallot, chopped
1 tbsp Vinegar
2 tbsp Water
1/2 tbsp Dijon mustard
1/2 tsp Organic coconut flower nectar
Salt and pepper to taste

Instructions

1. Cook the quinoa according to the package instructions. In the last 3 minutes of cooking, add the peas to the pot and re-cover.

2. Meanwhile, blend all the dressing ingredients together until smooth.

3. Transfer the cooked quinoa and peas to a large mixing bowl. Add the Jasberry Organic Ready-to-Eat Superfood Rice Original, carrots, and radish. Pour the dressing over the mixture and toss everything well.

4. Taste and season with salt and pepper as needed. Serve.
