Cashew Tofu with Jasberry Organic Ready-to-Eat Superfood Rice

Ingredients

1 Pack Jasberry Organic Ready-to-Eat Superfood Rice Original
1 cup Toasted cashew nuts
2 block Tofu, cubed
2 tbsp Extra-virgin olive oil
2 tbsp Corn flour
2 Garlic cloves
1 Red bell pepper
3 tbsp Soy sauce
1 tsp Sesame oil
1 tsp Organic coconut flower nectar
1 tbsp Water
3 Green onions, chopped

Instructions

1. Place the tofu in a bowl with the corn flour, salt, and pepper. Toss well to coat all sides of the tofu evenly.

2. Heat 2 tbsp of extra-virgin olive oil in a pan over medium-high heat. Add the tofu and fry for about 5 minutes, flipping occasionally, until golden brown and crispy.

3. Add the minced garlic, green onion, red pepper, roasted cashews, soy sauce, sesame oil, and organic coconut flower nectar. Cook for 1-2 minutes.

4. Mix the corn flour with water to make a slurry. Add it to the pan and stir, cooking for about 20-30 seconds until the sauce thickens.

5. Heat one pack of Jasberry Organic Ready-to-Eat Superfood Rice based on instruction.

6. Top the rice with the tofu mixture, garnish with extra green onion and sesame seeds, and serve.
