Soy-Ginger Meatballs with Jasberry Organic Ready-to-Eat Superfood Rice

Can meatballs be healthy? Absolutely! These chicken meatballs with soy-ginger sauce are one of our favorite recipes. The soy-ginger sauce is delicious and foolproof. This quick meal provides complete protein, complex carbs, and fiber. With Jasberry Organic Ready-to-Eat Superfood Rice Original, you can prepare this dish in just 20 minutes. Be sure not to overcook the meatballs to keep them moist and flavorful!

Ingredients

1 Pack Jasberry Organic Ready-to-Eat Superfood Rice Original
200g Ground chicken
1 Egg
1/4 cup Panko breadcrumbs
1 tbsp Extra virgin olive oil
1/2 Red onion, minced
2 tbsp Parsley, chopped
1/2 tsp Dried oregano
1 tbsp Soy sauce
1 clove Garlic, minced
1/2 tsp Freshly grated ginger
1 tbsp Mustard
1/2 tbsp Organic Coconut sugar
1/2 cup Edamame
Fresh chopped spring onions for garnish
Salt and pepper to taste

Instructions

1. Heat 1 pack of Jasberry Organic Ready-to-Eat Superfood Rice Original based on instruction. Stir in the edamame and set aside.

2. In a large bowl, combine ground chicken, egg, panko breadcrumbs, red onion, garlic, parsley, dried oregano, salt, and pepper. Gently mix with your hands until fully combined. Using a scooper or your hands, form the mixture into meatballs.

3. In a small bowl, whisk together soy sauce, garlic, ginger, mustard, and organic coconut sugar until well combined.

4. Heat a non-stick pan over medium-high heat. Add extra virgin olive oil and the meatballs. Drizzle the soy-ginger sauce over the meatballs. Sear on all sides until cooked through.

5. Remove the meatballs from the pan and serve over the Jasberry Organic Ready-to-Eat Superfood Rice Original with edamame. Garnish with spring onions.
